Pineapple Fried Farro

Let’s talk about Farro! It is delicious and as healthy as quinoa but with a texture similar to rice!! I love this stuff! Packed with protein and fiber this grain is awesome for your waistline! If you have a wheat intolerance it is important to note that farro is not gluten-free.

I had leftover coconut crusted chicken and I thought what would go better with it than pineapple fried farro!! I’m a huge fan of Thai food and pineapple fried rice is one of my favorites. But it’s high in calories! Of course with all recipes I think of ways to make them healthier and that is where pineapple fried farro comes in!


Cooking spray
2 eggs
1 tbs coconut oil
1 chopped red pepper
1/2 chopped purple onion
1 cup chopped pineapple
2 cloves garlic
3 stalks green onion
2 cups cooked and cooled farro
1 tbs tamari
2 tbs Sriracha


1. Chop all ingredients.

2. Heat pan and spray with cooking spray. Pour in lightly scramble eggs and cook until done. Remove from pan and set aside in a bowl.

3. Add oil to pan. Toss in peppers, pineapple and purple onion. Cook 3-5 minutes or until softened and pineapple begins to brown.

4. Add in garlic and green onion. Cook until fragrant. Remove all veggies from pan and set aside with egg.

5. Add cold farro to oiled pan and heat through.

6. Once farro is warmed toss back in the eggs and veggies. Mix well.

7. Add tamari and Sriracha. Mix well.

8. Enjoy!
