I love Korean food!! Especially kimchi! Kimchi is basically fermented cabbage. Except it’s not exclusively cabbage it could be any vegetable! It’s spicy and nutritious! Right up my alley! I use to eat it all the time years ago before I even knew the benefits of it!
It is rich in antioxidants, flavonoids, and probiotics! It is said to help combat aging, good for cholesterol, and helps strengthen your immune system! If that doesn’t make you want to try kimchi, I don’t know what will!
You can usually find a jar of kimchi in the produce section of your local grocery store! Look around the garlic and ginger! If not check out an Asian specialty store! I’m thinking about making my own from scratch soon! Stay tuned for that!
I saw kimchi in the grocery store the other day and knew exactly with I wanted to do with it! Kimchi fried quinoa of course!! Kimchi fried rice is so good! And I figured I could make it healthier by subbing in quinoa instead!
2 tbs coconut oil
1 finally chopped small onion
1 minced clove of garlic
1/2 cup kimchi
1 tbs kimchi juice
2 cups of cooked quinoa (best if cooked the day before or cooked with less water.)
2 tbs Korean chili paste (optional: I added it because I love spice and could only find mild Kimchi in the grocery store)
1 tbs tamari
1 tsp sesame oil
Dash of ground black pepper
3 stalks green onion (I didn’t have this on hand so I used chives from my garden)
1 fried egg
1/2 cup greens (kale, spinach)
1. Heat oil in frying pan or wok over medium heat. Add onion and garlic. Cook until fragrant.
2. Add kimchi and kimchi juice. Stir frequently for 1-2 minutes.
3. Add cooked quinoa. Mix well.
4. Add in remaining ingredients. Mix well and cook for and additional 5-10 minutes.
5. Top with egg and greens! Enjoy!
