This delicious fall inspired chicken recipe is a great way to spice up a boring chicken dinner! I was inspired by a recipe I saw on TV that was similar but made with sausage, pears, and butternut squash. I’ve been kind of bad with my diet lately and I’ve been trying to create healthier delicious recipes to get myself back on track! This one is awesome! And super easy! Anything that only requires one dish to make a full meal is for me!!
Marinade
1 tbs honey
2 tbs oil
1/2 cup balsamic vinegar
1 tsp Rosemary
1 tsp garlic
1 tsp sea salt
Ingredients
2 tbs oil
4 boneless skinless chicken breast
1 butternut squash chopped into large chunks
1 small chopped red onion
1 chopped pears
1 chopped apples
1 tbs honey
Fresh rosemary
Sea salt
Pepper
Directions
1. Mix marinade in small dish. Place chicken in gallon zip lock bag and pour in marinade. Place in refrigerator for at least 30 minutes.
2. Preheat oven to 375
3. Coat baking dish with oil. Add squash, onion, pears and apples. Drizzle with honey and season.
4. Place marinaded chicken on top of fruit and veggies.
5. Place in oven for 35-40 minutes.
6. Remove from oven check squash with a fork to make sure it is cooked through. If not remove chicken from dish and continue cooking for another until tender.
7. Drizzle with balsamic and enjoy!
